Duileasc Loaves

Ingredients:

2 medium eggs
600ml buttermilk
1 tbsp Donegal Rapeseed Oil
30g duileasc seaweed, soaked in cold water and chopped
1 tsp bread soda
600g self-raising flour
400g wholemeal flour
125g sunflower or olive oil-based margerine, softened
12g sweetener
2 tbsp pumpkin seeds
2 tbsp sunflower seeds

Instructions

1. Place the dry ingredients in a bowl and make a well in the centre. With a wooden soon mix the wet ingredients into the well and fold together.

2. Divide into portions and turn into four oiled and floured 1lb bread tins.

3. Cook the loaves in a preheated oven 180C/160C fan/gas mark 4 for 50 minutes to one hour.

4. Take the loaves out of the oven, remove from the tins, turn over and put back into the tins upside down and return to the oven for the final 10 minutes to achieve and even crust.
