Kylemore Abbey Healthy Brown Bread with Mixed Seeds
Ingredients:
900g Wholemeal flour450g plain flour
1tbsp bread soda
85g porridge oats and bran mixed together
85g mixed seeds(pumpkin, sesame, sunflower), keep a few for sprinkling on top
2 tbsp treacle
200ml Donegal Rapeseed oil
1.5ltr buttermilk plus a little extra
Instructions
1. Preheat the oven to 170C/15-C fan/Gas mark 3.
2. Sieve the bread soda and the lain flour, add the wholemeal flour and mix all the dry ingredients together in a large mixing bowl.
3. Add all of the wet igredients to the dry mix and mix well by hand. The buttermilk should be added a little at a time until the mixture is a similar consistency to very thick porridge or rice pudding.
4. Pour the mixture into two greased 2lb loaf tins. Using a knife, cut a line lengthways about 2cm thick along the top of the micture sorinknle the remaining seeds on top.
5. Bake at 170C/150C fan/ gas mark 3 for 50-60 minutes. remove from the oven. tap the bottom of the bread; when it is cooked it will sound hollow. Allow the bread to cool on a wire rack.
