Beef and Bean Quesadillas

Ingredients:

1 tbsp Donegal Rapeseed Oil
4 minute steaks, cut into strips
1 onio, finely chopped
2 garlic cloves, finely chopped
1 tsp cumin seeds
415g Heinz reduced sugar & salt Beanz
2tsp smoked paprika
Black Pepper
8 flour tortillas
100g low-fat cheese, grated
A handful of fresh coriander leaves, chopped
100g tomato salsa

Instructions

1. Heat the oil in a large, non-stick frying pan over a high heat. When the pan is beginning to smoke, add the steak strips and cook for 30 seconds, stirring. Transfer to a plate.

2. Turn down the heat to medium, add another tablespoon of oil and add onion and garlic. Cook for two minutes.

3. Add the cumin seeds and cook for a further minute.

4. Add in heinz beanz, paprika and a splash ofwater.

5.Using a potato masher, break the Beanz down slightly as they warm through. Season with the pepper.

6. Spread the Beanz onto four of the tortillas, top with the beef and scatter over the low-fat cheese and coriander. Spoon over some salsa, then top with the remaining tortillas.

7. Heat a griddle pan over a high heat. Place each tortilla onto the pan for 1-2 minutes on each side until the tortillas are crisp and golden and the cheese is melting. Serve immediately cutting each quesadilla into four wedges.
