Chicken Paprika Bake

Ingredients:

600g potatoes, peeled and chopped
1tbsp paprika
2 tsp Donegal Rapeseed Oil
2 onions, sliced
2 garlic cloves, crushed
2x400g tins of chopped tomatoes
4 chicken breasts, cut in half
2 red peppers

Instructions

1. Preheat the oven to 200C/180C fan/ gas mark 6. 2. Add the potatoes to a large saucepan of water. Bring to the boil, then simmer for 15-20 minutes until tender. Drain and mash. 3. Addone teaspoon of paprika to the mash and stir. Set aside. 4. Meanwhile, heat the oil in a large frying pan, add the onions and garlic and cook for a few minutes, until softened. 5. Stir in the paprik a for one minute, then add the tin of tomatoes and peppers and simmer. 6. Add in the chicken and continue to cook for 5 minutes. 7. Pour into a large, ovenproof dish, spoon over the mash so that it covers the top and bake for 15 minutes until the mash is golden on top and the chicken is cooked through.
