Garlic Sweet Potato Wedges
Ingredients:
2 Sweet PotatoesDonegal Rapeseed Oil with Garlic (Approx 4 Tbsp)
Sea Salt Black Peppercorns
Sprig of Fresh Parsley to Garnish

This recipe turns the humble sweet potato into something much more, fit to rival any chip!
So simple and mouth-wateringly good!
1. Preheat the oven to 200C
2. Peel the potatoes
3. To cut into wedges: Cut the potato in half width-ways, then each half into quarters, and each quarter into halves again.
4. Continue until you’ve reached the perfect size.
5. Add the wedges to a large, deep tin.
6. Toss with oil and season with salt and pepper
7. Bake in a hot oven for 35-40mins until tender
8. Sprinkle some freshly chopped parsley over the wedges to garnish and serve.
