Pork Kebabs

Ingredients:

2 pork chops
Cherry tomatoes
Red onion
Mushroom
Kebab sticks
Honey
Smoked paprika
Rocket leaves
Sea Salt & Black Pepper
3-4 tablespoons of Donegal Rapeseed Oil

Instructions

  1. Grill the pork chops until just cooked (not browned)
  2. When cooked, dice into chunks.
  3. Prep the veg, if you are using button mushrooms these won’t need to be chopped, anything larger will need to be cut in half. Dice the cherry tomatoes in half and cut the red onion into thick wedges.
  4. Begin layering your kebab sticks: start with the meat, tomato, mushroom, onion and repeat on each stick until full.
  5. Lightly oil an oven proof dish with Donegal Rapeseed Oil, and place the kebab sticks on top. Season with salt, pepper and paprika. Drizzle over with honey.
  6. Cook at 200C for 5-10 minutes until charred.
  7. Serve over a bed of rockets leaves and enjoy!
