Rushe Fitness Sausage & Tomatoes with Zucchini Cakes

Ingredients:

6 large firm tomatoes
1 lb sausage
6 mushrooms, sliced
1 medium yellow onion, chopped
1 tbsp Donegal Rapeseed Oil
Fresh cilantro

Instructions

  1. Preheat the oven to 350°F.
  2. Ovr medium-high heat, add 1 tbsp of Donegal Rapeseed Oil and brown onions, sausage and mushrooms together in a skillet.
  3. While the above is cooking, cut the tops off the tomatoes. Spoon out the middle and add to the skillet.
  4. Let all the ingredients simmer for 7-10 minutes,
  5. Serve with fresh cilantro and 2 Zucchini Cakes.
