Vanilla Cupcakes

4oz unsalted butter
4 fl oz Donegal Rapeseed Oil
8oz caster sugar
8oz self-raising flour
1 teaspoon baking powder
4 eggs
1 teaspoon vanilla essence


Place 18 paper baking cases in bun tins. Combine all the ingredients for the cupcakes in a large bowl and beat with an electric whisk until pale and smooth. Spoon the mixture into the cases. Bake in the oven for 20 minutes. Remove the tins from the oven and allow to cool for 5 minutes. Then remove the cupcakes and cool on a rack.
