Home Bird’s Zesty Salad
Ingredients:
• 10 radishes, stalk removed• ½ red onion
• 1 carrot, peeled
• 3 Tbsp Wholegrain mustard
• 4 Tbsp Honey
• 1 tbsp. Donegal Rapeseed Oil with Lemon
• Beet leaves
• 1 ripe avocado, cut into 1cm chunks
• Handful of cashew nuts
• Lemon wedges
• Himilayan rock salt and black peppercorns to season
Instructions
- In a food processor, finely grate the carrot and slice the radish and red onion.
- In a separate mixing bowl, drizzle the Donegal Rapeseed Oil with Lemon around the edge of the bowl. Add the wholegrain mustard and honey and mix.
Toss in the carrot, radish and onion and toss until fully dressed. Stir in the cashew nuts and avocado and season to taste
- To plate, layer the base of a salad bowl with beet leaves and spoon over the dressed salad. Serve with lemon wedges and homemade lemonade for the perfect summer salad!
Optional:
For something more meaty; prepare some pulled chicken with honey and mustard dressing to toss throughout
