Grilled Cajun Steaks with Caramelised Onion and Rocket Salad

  • Serves: 4

Ingredients:

- 4 sirloin steaks - rib eye, fillet or rump

Rub:
- 5 sprigs fresh thyme
- 1/2 tbsp Donegal Rapeseed Oil infused with Garlic
- 25ml Donegal Rapeseed Oil infused with Chilli
- 1 tbsp cajun spices

Salsa:
- 4 red onions
- Donegal Rapeseed Oil
- 40g brown sugar
- Fresh rocket
- 2 carrots, grated

Instructions

1: Mix the cajun spices with chilli and garlic oil and fresh thyme leaves.

2: Spread of top of the steaks and sprinkle with fresh thyme.

3: Peel onions and cut into whole slices as for onion rings. Drizzle with oil and sprinkle with sugar.

4: Place both onions and steaks under the grill and grill on each side until preferred degree of cooking is achieved.

5: Grate carrots and mix with rocket and drizzle with a little chilli oil.

6: Serve steak with caramelised onions and rocket salad.

Top Tip

Serve with warm Ciabatta bread as a steak sandwhich.
