Apple and Raisin Loaf

Ingredients:

- 2 apples, grated
- 1 tsp of bicarbonate of soda
- 1/2 cup of low fat natural yoghurt

- 1/4 cup of Donegal Rapeseed Oil
- 3/4 cup of brown sugar
- 1 egg
- 1 tsp of vanilla extract

- 1 cup of plain flour
- 1/2 cup of wholewheat flour
- 1/2 tsp of cinnamon
- 1/2 tsp of baking powder
- 1/4 tsp salt
- Handful of raisins

Instructions

1: Mix together the 2 apples, bicarbonate of soda and the natural yogurt and let sit whilst you are preparing the other ingredients.

2: Whisk together the oil, brown sugar, the egg and the vanilla extract in a separate bowl.

3: Sift the flour, cinnamon, baking powder and salt together and add the raisins.

4: Add the wet mixtures to the dry mixture and mix until it is just combined.

5: Bake at 180 degrees Celsius for 45-50 minutes.
