- 8 tbsp of Donegal Rapeseed Oil.
- 1.8kg or 2lb of fluffy potatoes, peeled and cut into 2 inch chunks.
- 3 sprigs of rosemary.
- Seasoning of your choice.
Instructions
Preheat the oven at 200 degrees/Gas mark 6. Put the Donegal Rapeseed Oil in a large roasting tin and transfer to the oven to heat it up. Put the potatoes in a pan of cold water. Bring to the boil and simmer for 8 minutes. Drain and allow to steam dry in a colander. Return to the pan, put the lid on and shake it gently to fluff up the edges.
Remove the roasting tin from the oven. Add the potatoes to the tin with rosemary and seasoning. Roast for 1 hour, shaking it halfway to turn the potatoes.
Transfer to a warm dish and serve!

These are also delicious with Donegal Rapeseed Oil infused with Garlic.
