Sugar Free Lemon & Blueberry Muffins

Ingredients:

- 10oz self raising flour
- 6oz wholewheat flour
- 2 teaspoons baking powder
- 2 eating apples
- 6 tablespoons Donegal Rapeseed Oil
- 4 eggs
- 4 tablespoons milk
- Zest of 1 lemon
- 6 oz blueberries

Instructions

– Peel and chop apples, cover with water and simmer until soft, drain and purée. Let cool.
– Combine dry ingredients. Add zest and blueberries.
– Whisk eggs and oil together, add milk and puréed apple.
– Add to dry ingredients and stir until just combined.
– Bake at 180c for 15/20 mins.
– Makes 12 muffins.
