Ingredients:

(Makes a 2 layer 8 inch cake)

2 cups granulated sugar
1 cup Donegal Rapeseed Oil
4 eggs
2 cups plain flour
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
Pinch salt
1 teaspoon cinnamon
1 teaspoon mixed spice
Zest 1 orange
2 cups grated carrots
Optional - 1/2 cup nuts (walnuts/pecans), and 1/2 cup raisins

Cream Cheese Frosting
12oz cream cheese
4oz soft butter
1/4 cup sour cream
1/2 icing sugar
1 teaspoon vanilla extract
Zest of 1 orange

Instructions

  • Beat sugar, oil and eggs together, add dry sifted ingredients and beat until combined, stir in zest, carrots, nuts, raisins.
  • Bake at 180c for 30mins.
  • Beat cream cheese and butter together, add sifted sugar then sour cream and vanilla, beat until smooth and creamy.
  • Use frosting to sandwich the 2 cake layers together and to cover top of cake, decorate with orange zest.
