Fig Bran Muffins

Ingredients:

1 tsp Donegal Rapeseed Oil
150g dried figs, chopped, plus 3 whole figs sliced
250g bran cereal
200ml low-fat milk
170g wholewheat flour
1 tbsp baking powder
180g apple sauce
170g honey
70ml Donegal Rapeseed oil
2 tbsp treacle
1 egg, beaten

Instructions

1. Preheat the oven to 200C/180C fan/ gas mark 6. Lightly coat a 12-tin muffin tray with the oil, using a piece of kitchen paper. 2. Combine the cereal and milk in a bowl and let sit for five minutes, until softened. Meanwhile, whisk together the flour and baking powder in a seperate bowl. 3. Add the apple sauce, honey, oil, treacle, and egg to the cereal mixture and stir until combined. Add the flour mixture and sir until just combined. 4. Gently stir in the choped figs. Spoon the batter into the prepared tray and top each muffin with a fig slice. Tap the tray on the counter a few times to remove any air bubbles.5. Bake for 20 minutes or until a toothpick inserted into the centre comes out clean. Remove from the oven and when cool enough to handle place the muffins on a wire rack to cool for 15 minutes.
