Hawaiian Ahi Poke Tuna

Ingredients:

Fresh tuna fish, allow 4oz per person
Finely chopped white onion
Finely chopped scallion
Donegal Rapeseed oil for dressing
Lemon pepper
Soy sauce gluten free

Instructions

Trim your tuna of any excess fat or membrane.

Cut your tuna into 1cm small dice.

Combine with the onion scallion, pepper, soy sauce and a little rapeseed oil just enough to bind the pieces of fish slightly.

Chill for at least 2 hours.

You must make sure the tuna or salmon is fresh !! do not attempt this dish with old fish or tinned fish , it is supposed to be eaten raw ! you may if you wish leave the tuna slices whole and use the recipe as a marinate , simply grilling the fish after to cook it but do remember that it is best served med-rare or very rare.
