Honey and Mustard Glazed Chicken with pine nuts & goats cheese

  • Serves: 4

Ingredients:

- 4 small chicken fillets
- 100ml Donegal Rapeseed Oil Honey & Mustard Dressing
- 280g goats cheese
- 200g pine nuts
- Bunch of rocket leaves
- Drizzle of Donegal Rapeseed Oil infused with Chilli
- Fresh basil leaves

Instructions

1: Cut the chicken breasts into strips and cover with our Honey and Mustard Dressing.

2: Leave to marinade for at least 15 minutes.

3: Stir fry the chicken strips.

4: Dry heat a frying pan and toast the pine nuts until golden.

5: Arrange rocket leaves in a salad bowl and drizzle with our chilli oil.

6: Add the warm cooked chicken strips and crumble goats cheese around the bowl with toasted pine nuts.

7: Arrange the fresh basil leaves and a final drizzle of chilli oil.
