Hummus with Chilli, Garlic and Parmesan

Ingredients:

2 Tins of Chickpeas
3 Tbsp Garlic Puree
¼ cup Donegal Rapeseed Oil with Lemon
¼ cup Tahini
¼ cup Parmesan Cheese, Grated
1 Tbsp Ground Black Peppercorns
1 Tsp. Ground Corriander
Juice of 1 Lemon
2 Tbsp. Chilli Flakes
Sea Salt
Sprig of Fresh Parsley, finely chopped

Instructions

  • Drain the chickpeas and wash under cold water. Blend in the food processor until mashed
  • Add the garlic, rapeseed oil, tahini, cheese, pepper, corriander, lemon, and chilli and blend until fully incorporated
  • Season with sea salt to taste and add additional lemon or chilli if the taste is still bland
  • Serve with fresh parsley sprinkled on top!
