Minted Green Beans

Ingredients:

600g green beans, trimmed
3 tbsp Donegal rapeseed oil
2 fat garlic cloves, thinly sliced
1 tbsp balsamic vinegar
3tbsp fresh mint, choped
black pepper

Instructions

1. Cook the beans in boiling water for 5-6 minutes, until just tender, then drain and refreshunder cold runing water. Shake well to remove excess water, then pat dry with kitchen paper.

2. heat one tablespoon of the oil in a small pan, add the garlic and fry quickly until crisp and lightly golden.

3. Add the garlic into a bowl with the oil from the pan and leave to cool (this can be done the day before and covered with clingfilm and chilled).

4. Whisk together the remaining oil, vinegar, mint, and pepper. Pour over the beans and mix well. Tip into a serving bowl and scatter over the garlic in its oil.

Top Tip

The cooking method as well as the amount of time you cook a vegetable will affect its nutritional value, especially the water-soluble vitamins such as B vitamins and citamin C. To retain most of the nutrients, it is best to steam the green beans for 5 minutes rather than boiling them
