Apple and Raisin Loaf

Ingredients
  • 2 apples (grated)
  • 1/2 tsp bicarbonate of soda
  • 1/2 cup low fat natural yogurt
  • 1/4 cup Donegal Rapeseed Oil
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup plain flour
  • 1/2 cup wholewheat flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • handful of raisins
Instructions
  1. Mix together the 2 apples, bicarbonate of soda and the natural yogurt and let sit whilst you are preparing the other ingredients.
  2. Whisk together the oil, brown sugar, the egg and the vanilla extract in a separate bowl.
  3. Sift the flour, cinnamon, baking powder and salt together and add the raisins.
  4. Add the wet mixtures to the dry mixture and mix until it is just combined.
  5. Bake at 180 degrees Celsius for 45-50 minutes.
