Balsamic and Honey Dressing

  • 4 tbsp balsamic vinegar
  • 1 tsp honey
  • 8 tbsp Donegal Rapeseed Oil
  • 1/2 tsp wholegrain mustard
  • salt and freshly ground black pepper
  1. Place the vinegar in a screw-topped jar.
  2. Add the honey and a good pinch of salt.
  3. Shake until the salt has dissolved.
  4. Add the oil to the jar with the mustard.
  5. Shake again until you have formed a thick emulsion.
  6. Season to taste and chill until needed.
