Banana and Peanut Butter Muffins

Ingredients
  • 1 1/2 cup wholewheat flour
  • 1/2 cup oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 bananas
  • 2 eggs
  • 2 tbsp honey
  • 2 tbsp peanut butter
  • 1 tsp vanilla extract
  • 1/3 cup Donegal Rapeseed Oil
  • 1/4 cup oat milk
Instructions
  1. Preheat the oven to 180C. Line muffin tin with muffin cases or grease it.
  2. Mix the dry ingredients together in a bowl - wholewheat flour, oats, baking soda and cinnamon.
  3. In a separate bowl, add the rest of the wet ingredients and mix. Pour in the liquid to the dry ingredients and mix well.
  4. Spoon the mixture into the prepared tin and bake for 15 minutes, or until a skewer inserted into the centre comes out clean.
  5. Transfer the muffins to a wire rack to cool.
