- Heat a shallow pan, add the Donegal Rapeseed Oil and sizzle the bacon for about 2 or 3 minutes until starting to brown.
- Add the chicken, fry for 3-4 mins until colour changes. Increase the heat and add in the mushrooms. Cook for a few minutes, stir in the flour and cook until a paste forms.
- Add the tomatoes, stir, then crumble in the stock cube. Simmer for 10 mins and then add any salt or pepper.
- Stir in the parsley and serve with rice or potatoes.
