Ingredients

rashers of streaky bacon
(cut into large pieces)

(cut into large pieces)

Donegal Rapeseed Oil

baby button mushrooms
(chopped)

plain flour

stock cube

tin of chopped tomatoes

handful of parsley
(chopped)
Instructions

Heat a shallow pan, add the Donegal Rapeseed Oil and sizzle the bacon for about 2 or 3 minutes until starting to brown.

Add the chicken, fry for 3-4 mins until colour changes. Increase the heat and add in the mushrooms. Cook for a few minutes, stir in the flour and cook until a paste forms.

Add the tomatoes, stir, then crumble in the stock cube.
Simmer for 10 mins and then add any salt or pepper.

Stir in the parsley and serve with rice or potatoes.
