Chicken Chasseur

  • 8 rashers of streaky bacon (cut into large pieces)
  • 4 chicken breasts (cut into large pieces)
  • 2 tbsp Donegal Rapeseed Oil
  • 200 g baby button mushrooms (chopped)
  • 1 tbsp plain flour
  • 1 stock cube
  • 400 g tin of chopped tomatoes
  • handful of parsley (chopped)
  1. Heat a shallow pan, add the Donegal Rapeseed Oil and sizzle the bacon for about 2 or 3 minutes until starting to brown.
  2. Add the chicken, fry for 3-4 mins until colour changes. Increase the heat and add in the mushrooms. Cook for a few minutes, stir in the flour and cook until a paste forms.
  3. Add the tomatoes, stir, then crumble in the stock cube. Simmer for 10 mins and then add any salt or pepper.
  4. Stir in the parsley and serve with rice or potatoes.
