Recipe by Donegal Rapeseed Oil.
- Preheat the oven at 200 degrees/Gas mark 6. Put the Donegal Rapeseed Oil in a large roasting tin and transfer to the oven to heat it up. Put the potatoes in a pan of cold water. Bring to the boil and simmer for 8 minutes. Drain and allow to steam dry in a colander. Return to the pan, put the lid on and shake it gently to fluff up the edges.
- Remove the roasting tin from the oven. Add the potatoes to the tin with rosemary and seasoning. Roast for 1 hour, shaking it halfway to turn the potatoes.
- Transfer to a warm dish and serve!
These are also delicious with Donegal Rapeseed Oil infused with Garlic.
