Garlic Sweet Potato Wedges

Ingredients
  • 2 sweet potatoes
  • 4 tbsp Donegal Rapeseed Oil with Garlic
  • sea salt
  • black peppercorns
  • sprig of fresh parsley (to garnish)
Instructions
  1. Preheat the oven to 200C.
  2. Peel the potatoes.
  3. To cut into wedges: Cut the potato in half width-ways, then each half into quarters, and each quarter into halves again. Continue until you’ve reached the perfect size.
  4. Add the wedges to a large, deep tin.
  5. Toss with oil and season with salt and pepper.
  6. Bake in a hot oven for 35-40mins until tender.
  7. Sprinkle some freshly chopped parsley over the wedges to garnish and serve.
