- Using a food processor, finely grate the carrot and slice the red onion and radish.
- Drizzle approximately 2 tablespoons of oil around the edge of a large bowl (metal or ceramic works best to prevent stick). Add 4 tablespoons of honey and 4 of wholegrain mustard, mix well until fully combined.
- Toss in the veg and stir until fully coated in the dressing,
- Toss in the cashew nuts and mix well. Season to taste and serve.
