Homemade Slaw

  • raw carrot
  • radish
  • red onion
  • Donegal Rapeseed Oil with Lemon
  • organic honey
  • wholegrain mustard
  • roasted salted cashew nuts
  • sea salt and black peppercorn (to season)
  1. Using a food processor, finely grate the carrot and slice the red onion and radish.
  2. Drizzle approximately 2 tablespoons of oil around the edge of a large bowl (metal or ceramic works best to prevent stick). Add 4 tablespoons of honey and 4 of wholegrain mustard, mix well until fully combined.
  3. Toss in the veg and stir until fully coated in the dressing,
  4. Toss in the cashew nuts and mix well. Season to taste and serve.
