Hummus with Garlic, Chilli and Parmesan

Ingredients
  • 2 tins of chickpeas
  • 3 tbsp garlic puree
  • 1/4 cup Donegal Rapeseed Oil with Lemon
  • 1/4 cup tahini
  • 1/4 cup grated parmesan
  • 1 tbsp ground black peppercorns
  • 1 tsp ground coriander
  • juice of 1 lemon
  • 2 tbsp chilli flakes
  • sea salt
  • sprig of fresh parsley, chopped
Instructions
  1. Drain the chickpeas and wash under cold water. Blend in the food processor until mashed. Add the garlic, Donegal Rapeseed Oil infused with Lemon, tahini, cheese, pepper, coriander, lemon juice, and chilli and blend until fully incorporated. Season with sea salt to taste and add additional lemon or chilli if the taste is still bland. Serve with fresh parsley sprinkled on top.
