Sugar and Wheat Free Banana and Date Muffins

Ingredients
  • 240 g oats
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 banana
  • 80 g dates
  • 100 ml Donegal Rapeseed Oil
  • 4 tbsp natural yogurt
  • 2 eggs
  • 1/2 tsp vanilla extract
Instructions
  1. Simmer dates in a little water until soft, blend to a purée with hand blender or in nutribullet. Let cool.
  2. Mash banana, add dates, natural yoghurt and the bicarbonate of soda, let sit to allow mixture froth up.
  3. With hand blender or nutribullet whizz 160g of the oats to flour consistency.
  4. To this add the remainder 80g oats and the baking powder.
  5. Whisk the eggs and oil together with a fork. Add vanilla extract.
  6. Add egg mix and yoghurt mix to dry ingredients and stir until just combined.
  7. Bake at 180c for 20mins.
