- Peel and chop apples, cover with water and simmer until soft, drain and purée. Let cool.
- Combine dry ingredients. Add zest and blueberries.
- Whisk eggs and oil together, add milk and puréed apple.
- Add to dry ingredients and stir until just combined.
- Bake at 180c for 15/20 mins.
- Makes 12 muffins.
