Sugar Free Lemon and Blueberry Muffins

Ingredients
  • 10 oz self raising flour
  • 6 oz wholewheat flour
  • 2 tsp baking powder
  • 2 apples
  • 6 tbsp Donegal Rapeseed Oil
  • 4 eggs
  • 4 tbsp milk
  • zest of 1 lemon
  • 6 oz blueberries
Instructions
  1. Peel and chop apples, cover with water and simmer until soft, drain and purée. Let cool.
  2. Combine dry ingredients. Add zest and blueberries.
  3. Whisk eggs and oil together, add milk and puréed apple.
  4. Add to dry ingredients and stir until just combined.
  5. Bake at 180c for 15/20 mins.
  6. Makes 12 muffins.
