Rushe Fitness Tasty Tuna Salad

Ingredients:

2 cans light tuna
1/2 cup green or black olives, chopped
1 green onion, chopped
1 jalapeno pepper, finely chopped (no seeds and/or less jalapeno if you want less spice)
3 tbsp capers, rinsed
Juice of 2 lemons
1 tbsp of Donegal Rapeseed Oil with chilli
6 cups of mixed greens (optional)
1 avocado, sliced
Lettuce.

Instructions

  • Portion out lettuce onto two plates.
  • In a bowl, combine all the ingredients and divide onto two plates on top of the lettuce.
  • Drizzle the Donegal Rapeseed Oil with chilli over the salad.
  • Serve with sliced avocado on top.
  • Serve immediately, or store in the fridge for a day for more flavour.
