Warm Chicken and Apple Salad

Ingredients:

1 tbsp Donegal Rapeseed Oil
4 Chicken breasts, skinless
200g watercress, washed
1 red apple, quartered, cored and cut into thin wedges
DRESSING >>>>
4tbsp natural low-fat yoghurt
4tbsp low-fat mayonnaise
2 tsp Dijon mustard
A few fresh chives, finely chopped. (or dried chives)

Instructions

1. In a large bowl, mix together the natural yoghurt, mayonnaise, mustard, chives and season with pepper.

2. Heat the oil in a frying pan over a medium-high heat for 4-5 minutes each side or until cooked through. Transfer the chicken to a plate. Chop each chicken breast into thick slices.

3. Add the chicken and the apple slices to the bowl with the dressing. Stir together so the dressing covers everything.

4. Serve each portion on a bed of watercress.

Lean cuts of meat are best – remove all visible fat from meat and all skin from poultry.
