Mediterranean Style Seafood

  • Serves: 4

Ingredients:

- 600g fish of your choice (you can use monkfish, hake, salmon, tuna, cod or haddock)
- 2 sprigs of thyme
- 25ml of Donegal Rapeseed Oil infused with Lemon
- 1 lemon

Med Salsa:
- 100g fresh tomatoes, chopped
- 1 red pepper, diced
- 1 yellow pepper, diced
- 1 tbsp Donegal Rapeseed Oil infused with Chilli
- Drizzle of Donegal Rapeseed Oil infused with Garlic
- Scallion onion, finely chopped
- 1 red onion, diced
- 1 courgette, diced
- Freshly ground black pepper
- 6 fresh basil leaves

Instructions

1: Fillet and cut fish into 150g portions.

2: Brush fish with a little of the oil, season with black pepper and fresh thyme leaves.

3: Heat a pan and add the Donegal Rapeseed Oil infused with Lemon.

4: Pan fry fish for 3 minutes on each side.

5: Allow to rest in a warm oven.

 

Salsa:

1: Prepare and dice all vegetables.

2: Heat the chilli oil and the garlic oil in a pan and sweat the peppers, onions and courgettes.

3: Season with black pepper and add the chopped tomatoes.

4: Cook on a low heat for 5 minutes.

5: Add the chopped scallions and chopped basil leaves.

 

Serve the salsa with the freshly cooked fish on top of a fresh lemon slice and drizzle with a little chilli oil.
