Warm Bacon and Potato Salad with Donegal Rapeseed Honey & Mustard Dressing
Ingredients:
- 500g of baby potatoes- 5 slices of smoked back bacon
- 1 bunch of spring onion, chopped
- 50g of cheese (of your choice)
- A good drizzle of our Honey & Mustard Dressing
Instructions
- Cook the potatoes in boiling water for 15-20 minutes until tender, then drain and cool slightly.
- Meanwhile, grill the bacon for 4-5 minutes until crispy then dice, add the onions, cheese and potatoes.
- Add the ingredients into the potatoes and drizzle with the Honey & Mustard Dressing.
- Season to taste.
- Serve and enjoy!
