Chicken, Chilli and Lime burgers

Ingredients:

450g minced chicken
2 tbsp chilli jam
1.5 tbsp reduced-sodium soy sauce
1.5 tbsp fresh corriander, chopped
3 tsp lime juice
60g fresh breadcrumbs
1 egg, lightly beaten
1-2 tbsp donegal rapeseed oil
4 burger buns
1 avocado, sliced lengthways

Instructions

1. In a large bowl, mix together the minced chicken, chilli jam, soy sauce, chopped coriander, lime juice, breadcrumbs and egg until well combined. Divide the mixture into four burgers and place on a lined baking tray. Chill for 15 minutes.

2. Heat the oil in a large frying pan over a medium heat. Cook the burgers for 4-6 minutes per side, or until cooked through.

3. Spread some chilli jam on the buns, top with the chicken burger and avocado slices.
