Marinated Chicken Kebabs

Ingredients:

- 4 chicken breasts
- 2 red peppers
- 2 yellow peppers
- 2 red onions
- 6 skewers

Marinade:
- 1-2 chilli peppers, chopped finely
- 1 red onion, diced
- 12 mushrooms
- 1 courgette
- 1/2 tbsp of Donegal Rapeseed Oil infused with Garlic
- Handful of fresh basil
- Handful of mint leaves
- 1 tbsp of Donegal Rapeseed Oil infused with Chilli
- 50g Donegal Rapeseed Oil Classic
- Freshly ground black pepper

Instructions

1: Put all the marinade ingredients into a food blender and blend into a paste like marinade.

2: Cut the peppers, courgette and onions into wedges.

3: Cut chicken into chunks.

4: Use the skewers and start skewering chicken chunks followed by a piece of onion, chicken, pepper, courgette and mushroom until you have a skewer full of ingredients.

5: Brush the skewers with marinade and grill for approximately 6 minutes, turning all the time.

6: Serve with creme fraiche and a drizzle of our lemon oil.

Top Tip

Use pork or lamb instead of chicken. Or you can also use the marinade for vegetarian kebabs.
