Chicken Chasseur
Ingredients:
8 rashers streaky bacon, chopped into large pieces4 chicken breasts, cut into large chunks
2 tbsp Donegal Rapeseed Oil
200g pack baby button mushrooms
1 tbsp plain flour
1 stock cube
400g tin chopped tomatoes with garlic
handful of parsley, chopped

Method
Heat shallow pan, add the Donegal Rapeseed Oil and sizzle the bacon for about 2 or 3 minutes until starting to brown. Add the chicken, fry for 3-4 mins until colour changes. Increase the heat and add in the mushrooms. Cook for a few minutes, stir in the flour and cook until a paste forms.
Add the tomatoes, stir, then crumble in the stock cube. Simmer for 10 mins, add any sauce or pepper, stir in the parsley – serve with rice or potatoes.
