Chinese Turkey Noodles
Ingredients:
100g rice noodles3tbsp hoisin sauce
juice of 1 lime
1 tbsp chilli sauce
1 tbsp donegal rapeseed oil
250g turkey mince
50g green beans, halved
1 carrot, peeled and cut into strips
6 spring onions, sliced diagonally
2 garlic cloves, chopped
Instructions
1. Place a large saucepan of water over a high heat and bring to the boil. Add the noodles and cook as per the packet instructions. Drain and set aside.
2. In a small bowl, mix together the hoisin sauce, lime juice and chilli sauce.
3. Heat the oil in a wok (or large, non-stick frying pan) over a medium-high heat. Add the turkey mince and cook for 4-5 minutes until nicely browned.
4. Add the garlic, green beans, carrots and spring onions and cook for 2-3 minutes.
5. Stir in the hoisin mixture and cook for a few minutes until sticky.
6. Return the noodles to the pan and stir to heat through. Serve immediatly.
