Roasted Brussels Sprouts

Ingredients:

- 400g Brussels sprouts, trimmed and halved (or whole if small)
- 3 tbsp of Donegal Rapeseed Oil
- 6 sprigs of thyme
- A squeeze of lemon juice
- Salt and freshly ground black pepper

Instructions

  • Preheat the oven to 190°C/Gas Mark 5. Put the Brussels sprouts into a large roasting dish, drizzle with the Donegal Rapeseed Oil, season with salt and pepper and toss to coat, then tuck in the thyme sprigs.
  • Roast for about 35 minutes, giving them halfway through, until they are a bit crispy and brown.
  • Squeeze some lemon juice over the roasted sprouts, along with a sprinkling of fresh thyme.
