So, Summer is over and the kids are all back to school. Where did those 3 months go! I’ve combined some recipes from quick snacks to wholesome dinners that you can cook up for the little ones when they come home to pack in those much needed nutrients.

Soups:

First up is the popular Carrot & Lentil Soup which is a guaranteed winner. You can find the recipe here: https://donegalrapeseedoil.ie/carrot-lentil-soup/.

Next up is the Butternut Squash with Coconut and Chilli Soup by Eimear at Home Bird.

Eimear is a fab Irish blogger from Leitrim. She is a minefield of healthy recipes and top tips. You can follow her here: https://www.facebook.com/homebirdfoodblog/?fref=ts

Breads:

What’s soup without some dipping bread! If you’re feeling adventurous and have a spare half an hour, try out our Wholemeal Spelt Loaf.

Quick Snacks:

Garlic Sweet Potato Wedges– tasty and easy!

Healthy Popcorn– Donegal Rapeseed Oil has a very high burn point so it’s ideal for popping some popcorn. Full of vitamin E and Omegas too!
